The cheese is made exclusively from cow's, sheep's, goat's or buffalo's milk, no milk from different animal species is mixed. Until about 25 years ago, milk was delivered here. At a time when 50 farmers still lived here – that was about 50 years ago. Today there are only 8. Of these 8 farmers, two take care of dairy farming, while others keep goats and sheep. In addition, there are four suckler cow farmers. All the farmers bring their milk to Chatrina and Peter Mayer, an experienced couple who turn the milk into delicious cheese and yoghurt.
